Pumpkin Maple Loaf

All the flavors of fall in one soft, moist loaf… what more could you want on a summer day?

Ok – I know I’m a little early on the fall bandwagon, but you can still enjoy this sweet loaf in the dog days of summer! When isn’t a good time for carbs?!

There isn’t! Every time is a good time for carbs!

Here’s what you’ll need:

2 cups whole-wheat flour
1 tsp. baking soda
1 tsp. ginger
1 tsp. cinnamon
1/2 tsp. cloves

1/2 tsp. salt
3/4 c. maple syrup
1 c. pumpkin puree
1 tsp. vanilla extract
2 eggs

Preheat your oven to 350* and spray and flour a small loaf pan
Just mix everything together – pour into your loaf pan and bake 45 minutes (ish)

That’s it! No refined sugar, high fiber, high vitamin, what could be better?
